"Sir Hoody" - (Hooded Merganser - Lophodytes cucullatus)

Hooded Mergansers are mainly seen here in the fall and winter seasons. This species is sometimes shot by duck hunters. When preparing to eat a Hooded Merganser, my friend David Malcolm says to use the following recipe: 1. Dress and remove all feathers and gut bird. 2. Season well with salt, pepper, garlic, and onion powder. 3. Marinate bird carcass overnight in orange juice. 4. Drain marinade from bird and pat dry. 5. Place bird on a piece of old pine board. 6. Place board and bird in oven. 7. Cook at 350 degrees for 1 hour. 8. After cooking for 1 hour, take bird and board out of oven. 9. Discard bird. 10. Enjoy eating the board! The reason Hooded Mergansers taste so bad is most likely because they eat small fish, crustaceans, and other marine life. Whereas more flavorful ducks like Wood Ducks and Mallards eat plant material such as acorns, wild celery, and corn.
